Green Chive and Roasted Red Pepper Falafel

Spice up weeknight meals with this delicious all veggie dish!

2 slices wholemeal bread from a small loaf, roughly torn2 x 15 ounce cans of chickpeas, drained and rinsed4 ounces of bottled roasted red peppers in brine, drained and roughly chopped1/2 cup Harmony House dried Bell Peppers1 egg, beaten2 tablespoons of finely chopped cilantro1 red chili, seeds removed and finely chopped1/2 cup of Harmony House Dried Chive RingsSalt and freshly ground black pepperLow calorie cooking spray

1. Place the bread in a food processor and pulse until you have fine crumbs. Add the chickpeas, roasted and bell peppers, ground cumin, egg, chopped cilantro, red chili and chives to the breadcrumbs and blend again until fairly smooth.

2. Transfer to a mixing bowl and season well.

3. Spray a large non-stick frying pan with low calorie cooking spray and place over a medium-high heat

4. Using a tablespoon, divide the mixture into 24 portions and, using your fingers, smooth into patties.

5. Working in batches, place in the pan (spacing them apart) and cook for 2-3 minutes on each side or until lightly browned and cooked through. Repeat with the remaining mixture.

6. Eat warm, or allow to cool.
