Spiced Carrot Cake with Dried Carrot Chunks

Classic carrot cake with a twist!

2 cups organic unbleached flour 1 1/3 cup sugar in the raw 1 teaspoon baking soda¾ teaspoon baking powder½ teaspoon salt 1 ¾ teaspoons cinnamon ½ teaspoon allspice½ teaspoon freshly ground nutmeg3 eggs, room temperature2/3 cup oil

½ cup milk or buttermilk1-2 teaspoons vanilla extract 1 ¾ cup raw shredded carrots 1 cup of Harmony House Dried Carrots1 cup raisins

Instructions:

Grease and flour a 13×9-inch baking pan.

Soak the dried carrots and raisins in boiling water. Combine all ingredients except the carrots and raisins. Mix on low until just moistened. Drain the carrots and raisins, and stir them into the cake batter.

Pre-heat oven 350 degrees. I use the convection oven, that temperature is 325 degrees. Bake 30-45 minutes.

Cream cheese frosting ingredients:

2 ½ cups confectioner’s sugar3 ounces room temperature cream cheese2-3 tablespoons butter 2-3 tablespoons heavy cream¾ teaspoons vanilla

Tasty tips: You can use ghee, melted butter, or yogurt as substitutions for “out of stock” pantry items Add a splash of your favorite rum or brandy to your raisins for a twist on the classic recipe It is best to take the cake out of the oven when the cake is still a little soft in the middle For extra “crunch” add a cup of chopped walnuts, almonds, or pecans For a spicy twist, add a few teaspoons of freshly grated ginger Add a tropical taste by adding a cup of shredded coconut
